The Best Roasted Potatoes
These are the easiest, most delicious oven roasted potatoes I’ve made. This recipe has a short ingredient list and makes wonderful golden brown and crispy potatoes.
I love how easy these roast potatoes are to make. This recipe delivers perfectly golden-brown, crispy potatoes that will be a hit, whether it’s a Tuesday night or Thanksgiving dinner.
Use any type of potato in this recipe, but Yukon Gold’s are my favorite.
Key Ingredients
- Potatoes: I love roasting Yukon Gold potatoes because they get super creamy in the middle, but you can use this roasted potatoes recipe for any potato. Try roasting russets, fingerlings , red, or baby potatoes.
- Oil: Since we roast our potatoes at a pretty high temperature, I like using a high-heat oil. Avocado oil is my favorite for this recipe.
- Salt and pepper: Potatoes can take a good amount of seasoning, so be generous with your salt and pepper before roasting.
- Smoked Paprika: My secret ingredient for the tastiest roasted potatoes! Smoked paprika is wonderful in this recipe and adds a smoky, sweet flavor. It also adds a bit of color. Smoked paprika is rarely spicy unless it says “hot” or “Hungarian” on the jar.
- Fresh herbs: These are optional, but I love scattering fresh chives over the hot potatoes just as they come out of the oven.
How to Make Roasted Potatoes
To roast potatoes, start with a hot oven. This guarantees perfectly golden brown roast potatoes with fluffy, tender centers.
To prepare the potatoes for roasting, I cut them into 1-inch pieces, and then toss them with salt, pepper, and a little smoked paprika.
I roast potatoes at 425°F for 25 to 35 minutes. To help them turn golden brown on all sides, I give them a good toss around 20 minutes. I find a flat spatula helps to lift and turn them.
These potatoes really are a staple for us. Here are a few more tips (and a few reminders) for making the best oven roasted potatoes.
Storing Roasted Potatoes
Roasted potatoes last in an airtight container in the fridge for up to 5 days. You can also freeze them! Spread your cooled potatoes on a baking sheet in a single layer and freeze for about an hour. Then, transfer the frozen potatoes to a freezer-safe container or bag and freeze them for up to 6 months. Thaw overnight in the fridge before reheating in the oven.
What to Serve with Roasted Potatoes
Serve roasted potatoes with classic dishes like meatloaf , roast chicken , poached salmon , and pork tenderloin . They are also excellent next to other vegetables, like roasted carrots , sautéed spinach , and roasted cabbage .
You can also serve a dipping sauce alongside the potatoes. Try this garlic aioli or my favorite homemade ketchup .

This is my favorite recipe for roasted potatoes. I use Yukon Gold potatoes, but you can substitute chopped russet potatoes, baby potatoes, fingerling potatoes, and red potatoes. These potatoes turn out flavorful, beautifully golden brown, and perfectly crispy!

You will need.
1 ½ pounds Yukon Gold or baby potatoes
1 ½ tablespoons oil like grape seed oil, vegetable oil or avocado oil
3/4 teaspoon fine sea salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon smoked paprika, see notes
Fresh herbs like chopped chives, parsley or mint, optional
1 Preheat the oven to 425°F (218°C). Line a large baking sheet with parchment paper or use a silicone baking mat.
2 Chop the potatoes into 1-inch chunks and add them to a medium bowl along with the oil, salt, pepper, and smoked paprika.
3 Toss well, then spread the seasoned potatoes onto the prepared baking sheet.
4 Roast the potatoes until golden brown on the outside and tender on the inside, 25 to 35 minutes. After 20 minutes, check the potatoes and use a flat spatula to stir them for the most even browning.
5 Scatter fresh herbs over the warm potatoes and serve.
Adam and Joanne's Tips
- Smoked Paprika: Adds a deep, smoky aroma and flavor. Unless noted on the packaging, it isn’t typically hot (spicy) and is mild and sweet.
- Silicone baking mat: We love using it when roasting vegetables in the oven since nothing sticks to it, and it is easy to clean. There are a variety of brands to choose from. The one shown in the photos and video is from Silpat. It helps with browning and crisping up the potatoes.
- Convection oven: If your oven tends to run hot or if you use the convection setting (fan setting), consider reducing the temperature to 400°F (205°C).

Made these last night for dinner, served with BBQ ribs and steamed broccoli. Didn’t follow the recipe exactly. I used a combo of vegetable oil and melted butter, and just added salt, pepper, and lots of freshly minced garlic. Would have loved to include the smoked paprika and fresh herbs but didn’t have any. . . maybe next time.Despite that, the potatoes were the hit of the meal (and my ribs are no slouch!) Delicious and easy. Will definitely make again.
can i put everything together the night before an roast the next day?
Hi Nancy, I’ve not tried this myself, but I would imagine that since the oil coats the cut edges of the potatoes, you should be fine leaving them in the fridge overnight.

Hi Leslie, I like to cut baby potatoes in half, or if they are on the larger side, I quarter them. This way, there are some flat sides that will get nice and golden brown.

Easy roast potatoes.
This is my everyday roast potatoes recipe. I use baby potatoes so it’s quick prep (no peeling). Great garlic-thyme flavour. Fresh herbs really are lovely, though dried can be used in a pinch! Don’t make the mistake of using minced garlic. It burns!
My everyday roast potatoes
I have a recipe for devilishly good crispy roast potatoes . They are the roast potatoes everybody dreams about, with a thick craggy crust that stays crispy for ages.
But they are not Monday night potatoes. They are reserved for when I’m out to impress.
Today’s roast potato recipe is what I make in my day to day life. Low effort yet utterly delicious, with a lovely golden outsides, soft insides, infused with beautiful garlic-thyme flavours.
Serve with everything!
What you need
Here’s what you need:
Potatoes – Use any small potatoes that can be cooked with the skin on. Baby potatoes, cocktail potatoes, new potatoes, red potatoes, creamer potatoes!
My ideal potato size is ~ 4cm/1.6″ which is a nice (big) bite size once cut in half. Half is ideal because there’s only one cut face to make golden (remember, this is my easy roast potatoes recipe!). If it’s much larger, cut into 3 pieces but just be mindful that you won’t get a very good golden colour on more than one cut face.
Garlic – Whole, unpeeled, with the skin on. We’re going to smash them with the side of our knife to make them burst open but remain (mostly) in one piece. Why not use minced garlic? Because it burns. And burnt garlic is bitter. Not pleasant!
You will be surprised how much garlic flavour is imparted from smashed garlic. Your house will smell amazing. 🙂
Thyme or rosemary sprigs – Thyme is my default but rosemary is also lovely. If you don’t have fresh herbs, you can use dried. But toss it in halfway through the roasting time, else it will burn.
Olive oil – Just your everyday cooking oil. No need to crank out the good stuff, reserve that for salad dressings!
Potato roasting words of wisdom
It really does take an hour. Don’t shortcut it. Nobody likes underdone potatoes!
Only toss once – the potatoes need undisturbed time to go golden.
If your potatoes are stuck, don’t force them and rip the crust off! They will loosen naturally when ready.
You can use baking paper if you want…..but full contact with metal gives the best colour and crispiness!
How to make easy roast potatoes
Toss potatoes in olive oil, salt and pepper. I just do this on the tray, because why create more washing up? Then toss through garlic and thyme.
Roast for 30 minutes at 200°C / 400°F (180°C fan-forced).
Toss – Remove from oven, then toss. If any are stuck, leave them. They will release when ready!
PRO TIP: Arrange the less golden cut sides facedown on the tray as they will get the best colour during the 2nd baking time.
Roast for a further 25 to 35 minutes. Toss again then pile onto serving plate and serve!
I don’t need to tell you what to serve with roast potatoes.
But what I do want to tell you is what I do with leftovers! I find roast potatoes get a bit sad and soggy when left overnight in the fridge. So I like to transform them into stovetop crispy smashed potatoes . Just lightly press down on the potatoes to flatten slightly (but still stay in once piece) using a glass, your hand or a spatula. Then pan fry in a little oil until golden and crisp.

Easy roast potatoes
Ingredients.
- ▢ 1 kg/ 2 lb baby potatoes or other small potatoes, halved (Note 1)
- ▢ 4 tbsp extra virgin olive oil
- ▢ 1 tsp cooking/kosher salt
- ▢ 1/4 tsp black pepper
- ▢ 5 garlic cloves with skin on , smashed (Note 2)
- ▢ 5 thyme sprigs or 3 rosemary sprigs (Note 3 for dried herbs)
Optional garnish
- ▢ Finely chopped parsley or fresh thyme (optional)
Instructions
- Preheat oven to 200°C / 400°F (180°C fan).
- Smashed garlic – Place side of knife on unpeeled garlic clove. Hit firmly with palm of hand so the garlic bursts open a bit but mostly stays in tact.
- Toss – Put potatoes on a tray and push together. Drizzle with oil, sprinkle with salt and pepper. Toss to coat. Toss through thyme and garlic. Spread out on tray.
- Roast 1 hour – Roast for 30 minutes. Toss. Roast for a further 25 to 35 minutes, or until the potatoes are golden. (Note 4 for stuck potatoes & golden TIPS!)
- Serve – Sprinkle with parsley, if using, and serve immediately!
Recipe Notes:
- Potatoes stuck? Don’t worry! If some potatoes are adhered to the tray, don’t fret, it means the crust hasn’t formed. Just leave it, rather than ripping the crust off. It will release when ready!
- Golden tip: If you can be bothered, arrange pale sides of potatoes facedown onto the tray for the last 30 minutes. The side of potatoes facedown on the tray will become extra golden.

Sour cream, mayonnaise and small amount of cider vinegar and wholegrain mustard. Then the usual scallions, julienned carrots, salt, pepper. But the honey mustard like you said is also awesome.

Whether roasted, fried, baked or mashed, the potato is a cornerstone of versatility. What better way to demonstrate this than by cooking a tasty potato for the first International Day of Potato on Thursday?
The United Nations established May 30 as the International Day of Potato in December 2023 to bring public attention to the environmental, economic and nutritional benefits of starch.
According to the UN , the total production of potatoes will reach 750 million tons globally by 2030, cementing its role as a staple food around the world.
The National Potato Council reports that potatoes in their natural state are a great source of vitamin C and potassium, as well as being an effective antioxidant, making them a palatable and healthy choice.
Potato lovers across the globe are encouraged to join the potato frenzy this year by using the hashtag #InternationalDayOfPotato to share their recipes, gardens and potato-related events.

Mashed potatoes are one of the most classic potato dishes. Many families have their secret recipe with a dash of a special herb to spice this basic dish up. While this recipe certainly won’t beat a family classic, it’s basic enough to be built upon and turned into your own.
Mashed potatoes
Ingredients:
4 pounds of potatoes
3 tablespoons of unsalted butter or butter alternative
Salt and pepper to taste
2 cups of heavy cream or alternative
To begin, rinse and peel the potatoes under cool water. Cut them into 1-inch pieces.
Fill a pot with cold water and add ½ teaspoon of salt. Add the potatoes and bring to a boil over high heat. It will take about 15 minutes for the potatoes to become fork-tender. Drain the water from the potatoes. Let rest for three to four minutes.
Add in the butter or butter alternative. Mash the potatoes and butter. A potato masher is a preferred tool for this job, but a hand mixer, immersion blender, potato ricer or fork also works.
Add the remaining salt, pepper and milk and stir. At this point, any other ingredients can also be added to taste.
Potato salad
Another staple food of the midwest is the “salad” — an amalgamation of starches, vegetables and assorted condiments and a fan-favorite at cookouts and pool parties. Potato salad is one of the most popular dishes in this mayonnaise-based cuisine. This is a quick and easy recipe you can try today.
3 pounds of potatoes
1 cup of mayonnaise
¼ cup of buttermilk
2-4 tablespoons of preferred mustard
½ cup of chopped dill
2 stalks of celery
¼ cup of chopped red onion
To begin, rinse and peel potatoes under cool water and cut into ½ inch chunks. Place in a large pot of water and boil for 10-15 minutes or until fork-tender.
In a separate bowl, mix mayonnaise, buttermilk, mustard, dill, salt and pepper.
Combine the potatoes and dressing. Add in dressing, celery and chopped onions.
If the potato salad seems dry, try adding milk, water or pickle juice.
Sweet potato casserole
An easy twist on traditional savory potato dishes is sweet potatoes. With almost as much recipe variety as their bland counterparts, sweet potatoes are a versatile food that can be used in many creative ways. They can even be transformed into a sweet dessert dish like this sweet potato casserole.
3 cups of sweet potatoes (cooked or canned)
4 tablespoons of melted butter
½ cup of milk
¼ cup of brown sugar, packed
1 teaspoon of vanilla extract
2 beaten eggs
Salt to taste
½ cup of flour
½ cup of brown sugar, packed
½ stick of melted butter
¼ tsp of salt
¾ cup of chopped pecans
To begin, preheat your oven to 350 degrees Fahrenheit.
Mash the sweet potatoes. Add melted butter, milk, brown sugar, vanilla extract and salt. Beat eggs and add in. Stir ingredients together until completely combined and add into an oven-safe dish.
In a separate bowl add softened butter, flour, brown sugar and pecan pieces. Use fingers or a fork to combine into a crumb texture. Evenly distribute the mixture over the casserole.
Bake for 25-30 minutes or until the top is golden. Let stand on the counter for 10 minutes or until mixture is set.
Potato gnocchi
Finally, for a less obvious potato recipe, gnocchi is a staple that can be used in a variety of ways. It is a popular Italian potato dumpling you can use like pasta in any dish. This recipe makes an easy gnocchi for beginners.
3 large potatoes
1 teaspoon of salt
¼ teaspoon of pepper
2 cups of flour
To begin, rinse and peel potatoes under cool water and cut them in half. Fill a pot with cold water and add in salt. Add potatoes to the pot and let cook until fork-tender.
Drain water and place potatoes in a bowl. Use a fork to mash into crumbs. Transfer to a floured surface and form a pile with the potatoes. Add the salt, pepper and flour. Make a well in the middle and crack the egg.
Begin to incorporate the flour mixture, potato and egg together. A pastry scraper is preferred for this task, but a fork or spatula also works. When the dough combines, begin kneading with your hands. If the dough is sticky, add small amounts of flour until smooth.
Split the dough into several small balls. Roll into ½ inch-thick ropes and cut ¾-inch pieces off. For texture, carefully roll the dough pieces against a fork.
You can now boil the pasta in soup, cook it in sauce or sauté it with your favorite herbs.

Another Redditor suggests a sushi-inspired twist for a salmon burger by adding wasabi mayo, carrots, and cucumbers to create a fish burger with an Asian flair.
